Rebecca’s Recipes- Chicken Cutlet

Chicken Cutlet Recipe
This is special recipe in my family that brings back so many memories!  My son Dominic’s great grandmother Ivy Sr. and grandmother Ivy taught me how to make chicken cutlets when I pregnant. with him.  It was a favorite of mine and I nearly lived off them!  Now, it is also one of my son’s absolute favorite meals! Please enjoy this easy to make chicken recipe and try to get creative! You can use them in all types of other recipes such as Chicken parmesan, sandwiches or a main dish!
Ingredients
2-4 Chicken Breasts
3 Cups Italian Style Breadcrumbs
4-6 Eggs
1 Cup Milk
1.5 Tbsp Garlic Salt
Olive Oil for frying
Directions
  • Fillet each chicken breast and set aside.
  • Place 3 cups of Italian style breadcrumbs and 1.5 Tbsp garlic salt into a bowl.
  • Crack 4 to 6 eggs into a bowl and light beat mixing in 1 cup of milk.
  • Coat each chicken breast in the egg and milk mixture, then dredge in the breadcrumbs and set aside.
  • Heat a heavy bottom skillet on med high and add enough olive oil to cover the bottom of the pan.
  • Reduce heat to medium, then place breaded chicken breast in the heated oil.  It should be simmering.
  • When the olive oil low, replenish throughout.
  • Flip the chicken when deep golden brown.
  • Place on a paper towel to drain excess oil.
